Honey Dijon Root Veggies

INGREDIENTS
4 large carrots carrots, diced into ½ inch cubes
1 sweet potato, diced into ½ inch cubes
3 medium parsnips, diced into ½ inch cubes
1 tbsp honey
1 tbsp maple syrup
1 tbsp olive oil
2 tbsp Dijon mustard
2 tbsp fresh sage, thinly sliced
1 cup of chopped walnut pieces
1/3 cup of goat cheese crumbles
INSTRUCTIONS
Preheat the oven to 400°
Add the veggies to a greased baking sheet
Prepare your honey dijon sauce by mixing together the honey, maple syrup, olive oil, and dijon mustard, whisking well.
Drizzle the honey dijon sauce over the veggies, mixing well to coat.
Top the veggies with walnuts and roast for 25 minutes.
Allow the mixture to cool for a few minutes, then top with goat cheese crumbles and sliced sage. Enjoy!
